A professional kitchen environment is a place of action, with plenty of room to move a priority. Any element that helps clear the air in terms of both ventilation and head space provides an ally to a busy chef.

Brightworks Stainless installed the German-designed Wimbock ventilation system in Wellington's chic new restaurant Pod that offers just such an advantage.

"Wimbock is a complete wall-to-wall ceiling system which incorporates lighting, ventilation and ceiling all in one component," says director Dean Francis.

The stainless steel system keeps the temperature down, provides a high extraction rate and generally makes the kitchen a freer place to work in, thanks to the absence of protruding ducts the bane of busy chefs having to duck between workstations.

"Wimbock is a vaulted, streamlined system that can be set three metres high, instead of the traditional two-metre clearance," says Francis. "The space saving is due to Wimbock's balanced incoming-outgoing air system called convection displacement."

Instead of forcing air, it uses natural thermal air currents to gently move the air towards the extraction units. This also means smaller fans, and therefore less noise and advanced energy efficiency.

Brightworks now holds the sole rights to manufacturing as well as installing this precision-engineered ceiling ventilation system in New Zealand.
