Southern Hospitality, a leading hospitality, food service and catering equipment supply company, was given the responsibility of designing and equipping the hotel kitchen, which supplies a 150-seat restaurant and bar, conference facilities for 300, and room service to all 263 guest rooms.National sales manager Gareth McCulloch says a relatively small footprint added to the challenge. "The design had to use the space efficiently, minimise cooking times and chef movements, and allow meals to be served quickly. The open design meant all storage areas had to be covered. Everything is hidden away in enclosed shelves mounted on plinth bases, so the kitchen always looks tidy." Kitchen at the Novotel Auckland Airport. Other special features of Southern Hospitality's design include stone benching that doubles as a servery in the buffet and restaurant area. Cooktec induction units beneath the benching keep food hot. The feature living wall in the bar also needed to be accommodated the beer system and refrigeration was wrapped around the wall.
