Durable porcelain enamel finishes, seamless stainless steel cooktops and burners designed to receive optimal airflow even when heating the largest pots – these are only some of the useful, aesthetically-pleasing features that you can expect from the individually crafted ovens from the Lacanche region of Burgundy, in France.
Art Culinaire specializes in the importation of high-end Lacanche ranges to the United States. All staff at Art Culinaire share in the philosophy that cooking is an experience that nurtures the cook as much as family and friends, says president Stan Barrett.
"Lacanche ovens are created from materials that have been used for centuries," says Barrett. "With familiar, even classic designs, the ovens offer every technological advantage."
Besides being offered in an array of sizes and colors, the Lacanche artisan-built appliances cater to a variety of chef requirements.
Each range is available in one of two cooktop styles – Classique or Traditional. The Classique top has a large, open 18,000 BTU burner in the middle, while the Traditional rangetop adds a large, cast iron simmer plate that covers the central burner.
The Classique burner delivers intense heat, reaching in moments the searing temperatures required for wok cooking, for example. With the same 18,000 BTU power, heat from the central burner on the Traditional rangetop is diffused by the heavy cast iron plate, which takes 10-15 minutes to reach higher temperatures.
Since simmering is a vital component of French cuisine, each Classique rangetop includes a removable simmering plate that fits over two side burners. The Traditional simmer plate rests on the cooktop, and can be removed for cleaning as necessary.
Three oven types are offered in the Lacanche collection: propane or natural gas, electric and electric convection.
The electric convection oven is specially sized to avoid overly dry air, and is suited to baking, says Barrett.
"On the other hand, the moister heat of the gas oven produces succulent roasts and tender meats – most of our clients select a double oven range with one gas oven and one electric oven. "
